    Vanillin is chemically known as 3-methoxy-4-hydroxybenzaldehyde. It is an organic compound extracted from Vanilla planifolia beans of the Brassicaceae family and is a white to slightly yellow crystal or crystalline powder. Slightly sweet, soluble in hot water, glycerol, and alcohol, not easily dissolved in cold water and vegetable oil. The aroma is stable, and not volatile at higher temperatures. It is easy to oxidize in the air and changes color easily when it meets alkaline substances.

     

    Natural vanillin powder can be naturally extracted from the vanilla pod extracts of vanilla planifolia, vanilla tahitensis, and vanilla pompona.
